Vegan Overnight Oats - Miam!!

A client of mine recently gave me a new breakfast recipe to try. I have always enjoyed homemade granola and other oat recipes but learned early on to be careful with oats because they must be toasted enough to be digestible. I had to question whether this recipe would really work out or not. Why? Put plainly, undercooked oats can cause major intestinal distress!

I followed the recipe precisely and to my sheer delight, she was right. This is absolutely delicious! And as a bonus.... no gas!! I hope you enjoy this recipe as much as we have.

Step 1: Gather your ingredients: oats, chia seeds, banana, milk, and vanilla.



Step 2: Dump it all in a bowl.


Isn't that pretty? Don't worry, it tastes great!



Step 3: Stir, cover and refrigerate overnight.


Step 4: In the morning, add a few drops of stevia and 1 Tbs. of nut butter (almond, peanut, cashew, whatever you want).

Step 5: Stir it up and gobble it up!


Vegan Overnight Oats:
1/3 c. rolled oats
2 T. chia seeds

3/4 cup milk (almond, rice, coconut)

1/4 t. vanilla

1 tiny banana-mashed

Yield: 1-2 servings

Combine the above ingredients the night before. In the morning add: 2 drops stevia 1 T nut butter. Stir and enjoy!
